If one prefers doing all the work later, then Photoshop, Photoshop CS and The Gimp all have perspective correction as well as lens distortion compensation. It's also easy to create the shallow DOF effect: select a circular area, invert selection, feather edges, then apply blur. The only thing you can't easily do is remove yourself from reflections.
But this project sure beats the cost of a view camera or a shift and tilt lens--or even a Lens Baby. (I would, however, suggest flocking the interior of the bellows so the reflections off the gloss plastic don't kill the contrast on the image.)

For the hassle of this thing, a lens baby seems like a bargan
